Carrot Cake Oat Squares

Ingredients
  

  • 1/2 cup almond flour
  • 3/4 cup oat flour
  • 1/2 cup rolled oats
  • 1 tsp baking powder
  • 1 cup grated carrots
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp salt
  • 2 free range eggs
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil
  • 1 tsp vanilla

Instructions
 

  • Grate 1 cup of carrots and set aside
  • Mix all wet ingredients in a large bowl (including carrots)
  • Mix all dry ingredients in a small bowl
  • Add dry ingredients to wet ingredients and mix thoroughly
  • Line a baking tin with parchment paper or coat with a touch of coconut oil
  • Bake for 20 minutes at 180 degrees Celsius
