Chocolate Chip Pumpkin Loaf

Ingredients
  

  • 2 eggs
  • 2 bananas
  • 1/3 cup maple syrup
  • 2/3 cup pumpkin puree
  • 2 teaspoons pumpkin spice
  • 1 teaspoon cinnamon
  • 2 cups rolled oats
  • 1 teaspoon baking soda

Instructions
 

  • Preheat the oven to 300 degrees Fahrenheit.
  • Mash 2 bananas, in a large mixing bowl. Add the 2 eggs and beat well. Add maple syrup, and pumpkin and combine well.
  • In a separate bowl, combine pumpkin spice, cinnamon, oats, and baking soda.
  • Slowly add wet ingredients to the dry ingredients, continuously stirring.
  • Line a pan with parchment paper and bake for 35 minutes until cooked throughout and golden brown.
