Veggie Shrimp Stir Fry

Ingredients
- 1 lb large shrimp, peeled and deveined
- 1 tablespoon avocado oil
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1 medium carrot, julienned
- 3 garlic cloves, minced
- 1 teaspoon freshly grated ginger
- 3 tablespoons coconut aminos
- 1 tablespoon sesame oil
- 1 teaspoon honey
- 1 tablespoon arrowroot powder mixed with 2 tablespoons water
- Sesame seeds and green onions, for garnish
Instructions

Whisk together coconut aminos, sesame oil, honey, and arrowroot slurry in a small bowl; set aside.

Heat avocado oil in a large wok or skillet over high heat.

Add garlic and ginger and stir for 30 seconds.

Add vegetables and stir-fry for 4–5 minutes until tender-crisp.

Push veggies to the side, add shrimp, and cook for 2–3 minutes per side until pink.

Pour sauce over everything and toss to coat. Cook 1 minute until sauce thickens.

Garnish with sesame seeds and green onions. Serve over cauliflower rice or rice noodles.
Chef's Note
High heat and constant movement are the keys to a good stir-fry. Have all your ingredients prepped before you start cooking.
