Flourless Banana Peanut Butter Muffins

Ingredients
- 2 ripe bananas, mashed
- ½ cup natural peanut butter (or almond butter)
- 2 eggs
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- ¼ teaspoon sea salt
- ¼ cup dark chocolate chips (optional)

Preheat oven to 350°F (175°C). Line a muffin tin with 8 liners or grease well.

In a large bowl, mash bananas until smooth.

Add peanut butter, eggs, honey, and vanilla; stir until well combined.

Mix in baking soda and sea salt.

Fold in chocolate chips if using.

Divide batter evenly among 8 muffin cups.

Bake for 15–18 minutes until a toothpick inserted in the centre comes out clean.

Cool for 5 minutes before removing from pan.
Chef's Note
Use very ripe, spotty bananas for the best natural sweetness. These muffins freeze beautifully — make a double batch.
