Chocolate Chip Banana Bread

Ingredients
- 3 very ripe bananas, mashed
- 2 cups almond flour
- 2 eggs
- 3 tablespoons maple syrup
- 3 tablespoons melted coconut oil
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ½ teaspoon cinnamon
- ¼ teaspoon sea salt
- ½ cup dark chocolate chips (dairy-free)

Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.

In a large bowl, mash bananas until smooth.

Add eggs, maple syrup, coconut oil, and vanilla; stir until combined.

Mix in almond flour, baking soda, cinnamon, and sea salt until a thick batter forms.

Fold in most of the chocolate chips, reserving a few for the top.

Pour batter into prepared loaf pan. Scatter remaining chocolate chips on top.

Bake for 45–50 minutes until a toothpick inserted in the centre comes out clean.

Cool in pan for 15 minutes, then transfer to a wire rack.
Chef's Note
The riper the banana, the sweeter and more flavourful the bread. Look for bananas that are mostly brown and spotty.
