Chilli Lime Chicken Skewers

Ingredients
- 1.5 lbs boneless, skinless chicken breast or thighs, cut into 1-inch cubes
- 2 tablespoons avocado oil
- 2 limes, juiced and zested
- 2 garlic cloves, minced
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ½ teaspoon smoked paprika
- ¼ teaspoon cayenne pepper
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions

In a bowl, whisk together avocado oil, lime juice and zest, garlic, and all spices.

Add chicken pieces, toss to coat, and marinate for at least 15 minutes (or up to 4 hours in the fridge).

If using wooden skewers, soak them in water for 20 minutes before threading.

Thread marinated chicken onto skewers.

Grill or cook in a grill pan over medium-high heat for 6–8 minutes per side, until cooked through (internal temp 165°F).

Rest for 5 minutes, then garnish with cilantro and serve with lime wedges.
Chef's Note
These also work great in the oven at 400°F for 20 minutes, flipping halfway through.
