Apple Bread Muffin Tops

Ingredients
- 1½ cups almond flour
- 2 tablespoons coconut flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- ¼ teaspoon sea salt
- 2 eggs
- 3 tablespoons maple syrup
- 2 tablespoons melted coconut oil
- 1 teaspoon vanilla extract
- 1 large apple, peeled and finely diced
- 2 tablespoons unsweetened shredded coconut (for topping)

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a large bowl, whisk together almond flour, coconut flour, baking powder, cinnamon, nutmeg, and sea salt.

In a separate bowl, whisk eggs, maple syrup, coconut oil, and vanilla.

Pour wet ingredients into dry and mix until combined. Fold in diced apple.

Scoop ¼ cup portions of batter onto the prepared baking sheet, spacing them 2 inches apart. Flatten slightly.

Sprinkle with shredded coconut.

Bake for 16–18 minutes until golden and set.

Cool for 5 minutes before serving.
Chef's Note
Honeycrisp or Gala apples work especially well here. For extra warmth, add a pinch of cardamom or allspice.
