Almond Crusted Chicken Fingers

Ingredients
- 1 lb chicken breast, sliced into strips
- 1 cup almond flour
- ¼ cup ground flaxseed
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- 2 eggs, beaten
- Avocado oil spray or 1 tablespoon avocado oil

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a shallow bowl, combine almond flour, flaxseed, garlic powder, onion powder, paprika, salt, and pepper.

Beat eggs in a separate shallow bowl.

Dip each chicken strip in egg, then coat thoroughly in the almond flour mixture.

Place on prepared baking sheet and lightly spray or brush with avocado oil.

Bake for 18–20 minutes, flipping halfway, until golden and the internal temperature reaches 165°F.

Serve with your favourite dipping sauce — mustard and guacamole work great.
Chef's Note
For extra crunch, add 2 tablespoons of unsweetened shredded coconut to the almond flour coating.
