Ingredients
- 1 ripe banana
- 2 eggs
- 2 tablespoons almond butter
- Coconut oil, for pan

Mash the banana in a bowl until smooth.

Add eggs and almond butter; whisk together until a uniform batter forms.

Heat a non-stick skillet over medium-low heat and lightly grease with coconut oil.

Pour small rounds of batter (about 2 tablespoons each) onto the skillet.

Cook for 2–3 minutes until bubbles form and edges look set, then flip and cook another 1–2 minutes.

Serve topped with fresh berries, a drizzle of honey, or pure nut butter.
Chef's Note
Keep the heat on medium-low — these pancakes are more delicate than traditional ones and can burn quickly. A ripe, spotty banana gives the best sweetness and texture.
