Serves 3

Ingredients:

  • 2 tablespoons soy sauce
  • 1 garlic clove, minced
  • 1 teaspoon sesame oil
  • 1-pound large shrimp peeled and deveined
  • 1 red bell pepper sliced
  • 1 red onion 
  • 1/2 cup shredded carrots
  • 1 cup bean sprouts 
  • 1/4 cup low sodium chicken broth
  • 2 cups fresh cauliflower 
  • 1/2 cup snap peas
  • sliced green onions for garnish

Directions:

  1. In a small bowl whisk together the soy sauce, garlic, and sesame oil and set aside
  2. Add onion, peppers, snap peas carrots, bean sprouts, and cauliflower to a pan over medium heat. Sauté for 3-4 minutes.
  3. Add shrimp to the pan until it turns pink and opaque.
  4. Add chicken broth and continue to stir for 3 minutes.
  5. Garnish with green onions.
