Serves 3
Ingredients:
- 2 tablespoons soy sauce
- 1 garlic clove, minced
- 1 teaspoon sesame oil
- 1-pound large shrimp peeled and deveined
- 1 red bell pepper sliced
- 1 red onion
- 1/2 cup shredded carrots
- 1 cup bean sprouts
- 1/4 cup low sodium chicken broth
- 2 cups fresh cauliflower
- 1/2 cup snap peas
- sliced green onions for garnish
Directions:
- In a small bowl whisk together the soy sauce, garlic, and sesame oil and set aside
- Add onion, peppers, snap peas carrots, bean sprouts, and cauliflower to a pan over medium heat. Sauté for 3-4 minutes.
- Add shrimp to the pan until it turns pink and opaque.
- Add chicken broth and continue to stir for 3 minutes.
- Garnish with green onions.
