Serves 4

Ingredients:

  • 12-15 ounces chicken breast, boneless
  • 2 tablespoons tamari, soya, or coconut aminos 
  • 2 tablespoons chicken broth 
  •  2 tablespoons scallions, chopped
  • 1 tablespoon rice vinegar
  • 2 teaspoons sesame seeds
  • 1 garlic clove, crushed
  • 1 teaspoon ginger, grated
  •  2 tablespoons olive oil
  • 1 cup carrots, sliced
  •  1 cup snow peas

Directions:

  1. Cut chicken into strips. 
  2. Combine soya sauce, chicken broth, scallions, vinegar, sesame seeds, garlic, and ginger in a bowl. 
  3. Add chicken to the mixture and marinate for 1 hour in the fridge. 
  4. Heat one tablespoon of olive oil in a large skillet. Sauté carrots and peas for 1-2 minutes.
  5. Remove chicken from the fridge, drain, and save remaining marinade. 
  6.  Add chicken to skillet and stir fry for 3-5 minutes. Add remaining marinade and continue sautéing until mixture bubbles. Once cooked, let it cool slightly and enjoy.
