Ingredients:

  • 1 cup almond flour⁣
  • ·1/4 cup coconut flour⁣
  • ·1 teaspoon cinnamon⁣
  • ·1 teaspoon pumpkin spice⁣
  • ·1/4 teaspoon sea salt⁣
  • ·1/2 cup coconut sugar ⁣
  • ·1/2 cup pumpkin puree ⁣
  • ·1/4 cup coconut oil⁣
  • ·1 teaspoon vanilla⁣
  • ·3 eggs
  • ·1/3 cup mini dark chocolate chips⁣

Directions:

  1. Mix the almond flour, coconut flour, cinnamon, pumpkin spice, sea salt, and coconut sugar together in a large mixing bowl.
  2. Whisk pumpkin puree, melted coconut oil, vanilla, and eggs together in a medium sized bowl.
  3. Slowly add wet ingredients to dry ingredients, continue mixing.
  4. Fold dark chocolate chips into the batter.
  5. Line mini loaf pan with parchment paper, or coat with a touch of coconut oil.
  6. Bake at 180 degrees Celsius for 20-25 minutes or until golden.
