Ingredients:
- 1/2 cup almond flour
- 3/4 cup oat flour
- 1/2 cup rolled oats
- 1 tsp baking powder
- 1 cup grated carrots
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp salt
- 2 free range eggs
- 1/4 cup maple syrup
- 1/4 cup coconut oil
- 1 tsp vanilla
Directions:
- Grate 1 cup of carrots and set aside
- Mix all wet ingredients in a large bowl (including carrots)
- Mix all dry ingredients in a small bowl
- Add dry ingredients to wet ingredients and mix thoroughly
- Line a baking tin with parchment paper or coat with a touch of coconut oil
- Bake for 20 minutes at 180 degrees Celsius
