Ingredients:

  • 1/2 cup almond flour
  • 3/4 cup oat flour
  • 1/2 cup rolled oats
  • 1 tsp baking powder
  • 1 cup grated carrots 
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp salt
  • 2 free range eggs
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil 
  • 1 tsp vanilla

Directions:

  1. Grate 1 cup of carrots and set aside 
  2. Mix all wet ingredients in a large bowl (including carrots) 
  3. Mix all dry ingredients in a small bowl
  4. Add dry ingredients to wet ingredients and mix thoroughly 
  5. Line a baking tin with parchment paper or coat with a touch of coconut oil
  6. Bake for 20 minutes at 180 degrees Celsius
