Serves 2-3

Ingredients:

  •   1 eggplant
  •  1 cup almond flour
  • 1 teaspoon garlic powder 
  • ½ teaspoon paprika 
  •   ½ cup egg whites
  •   1.5 cups tomato sauce
  •    ½ cup cheese of choice 
  • Sea salt and pepper to taste

Directions:

  1. Cut the eggplants into rounds
  2.   Dip rounds into egg wash
  3.   Coat rounds in almond flour and spices 
  4.   Add coated rounds to a lined pan with parchment paper 
  5.   Bake for 25 minutes on 250 degrees Fahrenheit 
  6.   Top rounds with cheese
  7.   Bake for another 5 minutes 
  8.   Enjoy!
