Serves 2-3
Ingredients:
- 1 eggplant
 - 1 cup almond flour
 - 1 teaspoon garlic powder
 - ½ teaspoon paprika
 - ½ cup egg whites
 - 1.5 cups tomato sauce
 - ½ cup cheese of choice
 - Sea salt and pepper to taste
 
Directions:
- Cut the eggplants into rounds
 - Dip rounds into egg wash
 - Coat rounds in almond flour and spices
 - Add coated rounds to a lined pan with parchment paper
 - Bake for 25 minutes on 250 degrees Fahrenheit
 - Top rounds with cheese
 - Bake for another 5 minutes
 - Enjoy!
 

Almond Crusted Eggplant Parmesan
