Ingredients: 

  • 1 cup almond flour ⁣
  • 3-4 tablespoon maple syrup ⁣
  • 1 scoop protein powder ⁣
  • 1/4 cup cashew milk ⁣
  • 1/2 cup almond butter ⁣
  • 1/4 cup vegan chocolate chips⁣
  • 1/2 tsp baking powder ⁣
  • 1/2 tsp baking soda ⁣
  • 1 teaspoon cinnamon ⁣
  • 1 egg ⁣
  • 2 tablespoons coconut oil ⁣
  • 1 teaspoon vanilla extract ⁣

Directions:

  1. Set the oven to 375 degrees fahrenheit and line a baking sheet with parchment paper. 
  2. Begin by mixing all dry ingredients such as almond flour, protein powder, baking powder, baking soda, and cinnamon together in a bowl.
  3. In a separate bowl, combine the maple syrup, cashew milk, almond butter, vegan chocolate chips, egg, coconut oil, and vanilla extract.
  4. Slowly add dry mixture to wet ingredients mixing well.
  5. Scoop cookie mixture onto baking sheet trying to form even sized cookies.
  6. Bake for 12-15 minutes.
