Makes 10 muffins

Ingredients: 

  • 3/4 cup rolled oats 
  • 1/2 cup almond flour 
  • 1 tsp baking powder 
  • 1/2 tsp baking soda 
  • 1 tsp cinnamon 
  • 1/2 tsp pink salt 
  • 1 tsp vanilla 
  • 1/3 cup coconut oil 
  • 1 cup grated apple 
  • 1 cup chopped apples (cubes) 
  • 2 eggs (can sub flax) 
  • 1-2 scoops protein powder 
  • 1/4 cup maple syrup (sub 3 tbsp stevia)

Directions:

  1. Mix all dry ingredients together in a bowl
  2. Mix all wet ingredients together in a bowl
  3. Add all ingredients together and mix thoroughly 
  4. Line a muffin tin with parchment paper
  5. Distribute mixture evenly 
  6. Bake at 400 Fahrenheit for 15-20 minutes
